To produce 400 litres of wine we used 4,000 Kgs of dry grapes and 1,000 Kgs of raisins, therefore 12.5 Kg are needed to produce 1 litre of wine. In reality we use way more harvested grapes because the ones used are already dried when weighted. - Selection of the grapes: We make first an extreme selection of the oldest vines in Finca Lamula. This Finca is located in Almachar in the Mountains of Axarquia (Málaga), at between 200-600 m altitude. Vineyards in this Finca are grown with organic viticulture techniques, and all the work is done manually, being these vineyards inaccessible for machinery. Soil is poor, composed mainly by slate. Climate is dry and smoothed by the influence of the near Mediterranean Sea (average annual rainfall is 560 l/m2). The second selection of grapes comes in the Finca, after the harvest which, due to the steepness of these hills, is manual, made only with the help of a mule. The third selection comes in the cellar, on the selection table, before pressing. - We press around 4000 kg of the driest, most “pasificadas”, and hence, with the highest sugar concentration, from the oldest vines of Finca Lamula. The process of drying is completely natural: we lay the bunches of grapes arranged in one layer in special cases under the roof of the farm in Finca Lamula; they get dried with the warm summer breeze of the Axarquia coming through open windows (temperature outside during daytime may rises up to 40º). From these grapes we obtain about 900-950 l of must. - After this, we crush 1000 kg of selected raisins produced in the same farm, which are then macerated in small tanks together with the must for 24 h.
