Giacomo Mori Chianti is the essence of great Chianti- medium bodied, sour cherry fruits, fragrant, savory acidity, and a dry finish. The wine is almost all Sangiovese with some Canaiolo and Colorino. The vineyards are South, Southeast orientation and planted to sandy, chalky soils. The climate here is Mediterranean with constant breezes to keep the vines healthy. The wine making is very simple, traditional fermentations, aged in large 20 Hl Slavonian oak cask and French tonneaux of the third passage.
